Peacock Chai Overnight Oats
Chai and oats want the same things: warm spice, something creamy, and time to sit. This is the easiest way we know to get a proper chai breakfast without standing over a pot on a weekday morning.
The trick is steeping Peacock Chai directly in warm milk instead of water. Cardamom, ginger, cinnamon and black pepper give up far more of themselves to milk than to water — you get a rounder, sweeter spice than a splash of tea in a bowl ever gives you. Then the oats do the rest overnight.
Why this works
Overnight oats are really just a cold soak: the oats soften in liquid while chia seeds thicken everything into something spoonable. Because the liquid here is spiced chai milk rather than plain milk, every bite carries the blend instead of tasting like oatmeal with cinnamon sprinkled on top.
Use rolled oats — not instant, not steel-cut. Instant turns to paste by morning; steel-cut never softens enough in a cold soak.
Make it yours
This is a forgiving base. Swap the maple syrup for honey, use oat or almond milk to keep it dairy-free, or stir in a spoonful of yogurt for extra tang and body. Sliced banana and toasted almonds are our default topping, but roasted pear or a spoonful of apple butter is lovely once the weather turns.

Keeping and serving
They keep for up to three days covered in the fridge, so a double batch on Sunday covers most of the week. Eat them cold straight from the jar, or warm a portion gently if you would rather have them hot.
